For the saddle of venison with pumpkin seed flour first separate the eggs. Beat egg whites with granulated sugar until stiff. Egg yolks, soft butter, vanilla sugar and powdered sugar mix until fluffy. Mix rum, pumpkin seed flour and wholemeal spelt flour into the yolk mixture.

Gently fold in beaten egg whites. Spread into a greased and floured loin pan. Bake at medium heat. Let cool. Heat coconut oil and melt cooking chocolate in it (not too hot).

Stir in pumpkin seed oil liqueur and glaze the saddle of venison with pumpkin seed flour.
