Soak gelatin in cold water for at least 5 minutes and squeeze lightly. Heat the apple juice with the slit vanilla pod. Allow gelatine to melt in hot apple juice according to package instructions. Remove the vanilla bean, refrigerate the apple juice and let it gel slightly. Peel the apples, remove the core, finely dice the flesh. As soon as the juice gels, stir in the apple cubes. Rinse different pudding molds to cool, pour in the jelly and set in the refrigerator. Before serving, hold the molds briefly in hot water, then invert. Serve with vanilla sauce.
