For the pears in red wine, halve the vanilla bean and scrape out the pulp. In a saucepan, bring red wine, sugar, vanilla sugar, blackberry liqueur, lemon juice, vanilla beans, vanilla pulp, cinnamon stick and cloves to a boil. Add pears and simmer over lowest heat, turning occasionally, until soft and glazed but still firm to the bite, about 25 minutes.

Let the pears cool in the broth and then let them steep in the broth overnight in the refrigerator. Then cut the pears in half and remove the core. Fill vanilla ice cream into the cavities thus created and serve garnished with mint leaves.
