Instructions:

Prepare the tagliatelle al dente according to the instructions. Cut the salmon into cubes and the spring onions into thin rings.

For the sauce, reduce the fish stock, white wine and whipping cream by half and season with the juice of a lemon, pepper, salt and saffron.

Cook the salmon cubes and spring onions in the sauce and then toss the cooked tagliatelle in it. Season again with salt and pepper. Arrangement

Arrange the tagliatelle with the salmon, spring onions and sauce on plates and sprinkle with tomato concassee and chive rolls.
