Remove the bones from the herrings. At the same time, fish the pickled onion out of the jars and chop finely. Drain and rinse the red beans.

Cut the pickled gherkins into fine cubes. Also chop the fresh onion very finely. Peel the apples and cut them into tender cubes.

Put the herring, onions, beans, pickles and apple in a bowl. Add mayonnaise, sour cream and mustard, mix everything and season the salad with some herb salt.
