Instructions:

Make a shortcrust pastry from the given ingredients and let it rest in a cool place for about 2 hours.

Towards the end of the resting time, preheat the oven to 170 °C convection oven. Grease the baking tray.

Roll out the short pastry on a floured work surface. Using a cookie cutter, cut out little trees from the dough and place them on the prepared baking tray. Bake in a hot oven for about 15 minutes, then let cool.

For decorating, mix egg yolk with powdered sugar until smooth. Coat the cookies with honey (leaving out the “tree tops” and “tree trunks”) and dip the honey side into the grated pistachios. Brush the tops of the trees with the yolk-sugar glaze. Let the cookies dry completely.
