For the wild garlic dumplings with curd, mix all ingredients, season to taste and let the mixture rest for a while. Boil salted water in a large pot. Cut out larger or smaller dumplings from the mixture and let them steep in the lightly boiling salted water. (Cook sample dumplings if desired.) Lift out and drain well.

Arrange the wild garlic gnocchi with curd cheese on warmed plates, drizzle with melted butter and sprinkle with grated cheese. If desired, sprinkle with chopped wild garlic.
