For apricot-ginger compote, peel and finely slice (or shave) the ginger. Wash and dry apricots, cut in half, remove seeds and peel to taste. Squeeze the orange.

Bring water and orange juice with sugar to a boil, cover and simmer gently for about 3 minutes. Stir ginger slices and apricot halves into the syrup, bring to the boil again and boil down the compote for another 5-8 minutes.

Allow apricot-ginger compote to cool slightly and serve.
