For the fried halloumi on beetle beans, place the cooked, drained and still lukewarm beetle beans in a bowl.

Finely chop the white onion and garlic, mix them with the beans and season with oil, vinegar to taste, salt and pepper. Allow to stand briefly at room temperature, then mix again.

Meanwhile, cut the red onion into rings. Cut the halloumi into small cubes and fry briefly in hot oil.

Now put onion rings and halloumi on the salad and sprinkle with chopped parsley.

Top the halloumi with crispy pastry.
