For cari de poulet, heat olive oil in a large pot and brown chicken breasts. Add bay leaves and thyme, as well as salt and pepper.

Add finely chopped garlic, ginger and finely chopped onions and salt again if needed. Add saffron and curry, stirring constantly.

Now add the finely chopped tomatoes with a little water. Cook over medium heat for about 1 1/2 hours.

10 minutes before serving, add the parsley and mushrooms. The cari de poulet is best served with rice.
