Fillet all the citrus fruits and collect the juice.

Caramelize the sugar in a saucepan, extinguish with Grand Marnier, white wine and fruit juice, bring to a boil until the sugar dissolves and then season with passion fruit syrup. Pour this sauce over the fruit and cool.

Fry the almond flakes in a frying pan. Serve the fruit sprinkled with the flaked almonds with vanilla ice cream.
