For the fusilli with salmon and broccoli, divide the broccoli into small florets. Cook in a pot with a little water over low heat until tender.
Skin the salmon and carefully remove all bones (use tweezers if necessary). Heat the milk in a saucepan and put the salmon fillet in it. Add parsley stalks and steam over low heat until fish is cooked. Lift the fish fillet out of the broth and remove the parsley stalks.
Mix the flour with a little water, milk or whipping cream until smooth and stir into the milk broth. Break up the fish with a fork and fold into the milk sauce with the small broccoli florets and some butter.
Cook the pasta in boiling water, with a few drops of oil added, until tender. Drain and serve with the salmon-broccoli sauce.
