For the rice casserole with raisins, preheat the oven to 200° Celsius.

In a saucepan, bring the milk to the boil with the salt and lemon zest. Add the rice and steam at low temperature for a good half hour.

Allow the rice to cool. Beat the butter with the sugar until creamy. Stir in the egg yolks until the mixture is thick and fluffy. Fold the rice porridge by the spoonful into the foamy mixture.

Rinse and dry the raisins and add them with the almonds. Beat the egg whites until stiff and fold them in carefully.

Pour the mixture into a lightly greased baking dish and bake the rice casserole with raisins for about 45 minutes.
