For 4-6 people.
Heat whipping cream, sugar & chocolate in a baking bowl until mixture thickens (do not make). [Microwave: 4 min at 600 W, stir well every minute]. Whip egg yolks with vanilla sugar until creamy (so work with a hand mixer until your arm falls off and then whip for another 5 min. Egg whites in another baking bowl until stiff (but not too dry, just a cut with a kitchen knife should remain visible).
Now carefully mix the chocolate mixture with the egg yolk mixture using a whisk (a whisk is not a hand mixer !). Heat this amount on a hotplate for 2 min (maximum one third power) [microwave: 2 min at 300 W]. Now cool a little bit and carefully stir in the snow. Fill into glasses and refrigerate for 2 hours.
Tip: Feel free to use better chocolate – the more delicious the result!
