Instructions:

Malic acid in

8 scoops of fruit powder dissolved in 1 scoop of tap water.

One measuring spoon contains 2.5 ml.

Whip the egg whites and tap water to stiff peaks.

Allow the gelatine to swell in the tap water and melt in a hot water bath at 70

C to melt.

Mix fruit powder dry with granulated sugar and add syrup or honey and tap water.

Boil tap water on stove until 115 C. Cool the sugar solution to 90 C, then add the gelatine and the

and then add the dissolved malic acid.

Stir this solution on the spot under the snow. Then pour out the quantity onto parchment paper. Best in a wooden frame or alternatively on a clean

baking sheet. (Or into a baking pan and later turn out like a pudding).

After cooling, cut into small pieces and roll in fine sugar or possibly still “Isomalt puderfein” (draws no moisture).

Our tip: Use a bacon with a strong flavor – so you give this dish a special touch!
