For fritots de legumes (fried vegetables), first wash cauliflower and broccoli and cut into florets. Carefully clean the salsify and celery, cut away the ends of the stalks and cut into pieces about 5 cm long. Blanch cauliflower and broccoli florets and salsify and celery pieces and drain well.

Prepare a wine batter (three to four times the amount is best), set aside.

Rinse mushrooms and cut in half or quarters, if desired. Rinse parsley, pluck and chop finely. Season all vegetable pieces with salt, pepper, lemon juice and the prepared parsley.

Then dredge in flour and pull through the batter.

Heat enough fat in a deep fryer (or a high pot) and fry the vegetable pieces one after the other at approx. 180 °C until crispy.

Drain the fritots de legumes (fried vegetables) on a piece of kitchen roll and serve as fresh as possible.
