For the mango chutney, clean the onion, chop it and fry it until lightly brown. Let the raisins swell.

Cut the ginger into small pieces.

Cut the mangoes into cubes and put all the ingredients in a saucepan and let it boil well.

Season with salt and pepper and put the chutney into a clean jam jar.
