Pancakes with Cream Cheese and Cherries

Instructions:

Sift flour and mix with salt and sugar in a baking bowl. Add milk and eggs, stir everything together to a smooth dough. Cover with cling film and let rest for at least 20 minutes. Pour 2-3 tablespoons of batter into a lightly greased small crêpe pan. Spread batter evenly. Bake at medium temperature for 2-4 min. until golden brown on both sides. Transfer to a plate, cover with a dishcloth and place in warm oven. Repeat process with remaining dough, greasing skillet as needed. For filling: beat cream cheese in small baking bowl until smooth. Fold in lemon zest, vanilla sugar, sugar and juice. On each pancake, mold 2 tbsp cheese filling and 4 cherries, wrap sides and roll up.
