Instructions:

Cut the tofu into diamond-shaped pieces and blanch briefly in boiling hot water. Drain.

Heat the oil in a wok or frying pan until it begins to smoke. Briefly stir-fry the young onion and ginger pieces. add clear soup, salt, oyster sauce, sugar, tofu and rice wine or sherry. Simmer the whole gently for a few minutes. Stir the maizena (cornstarch) with a little water and add to the wok form. Stir well and let it bubble again to thicken the sauce. Sprinkle the Sichuan pepper on top and bring to the table on the spot.

Serve with long-grain rice and a few other Chinese dishes, perhaps one with vegetables and one with poultry or meat.
