For the fritto misto di mare, clean squid well, cut off heads, but use tentacles. (For large squid, cut tubes into strips.) Scale red mullet, gut, cut off heads and fins. Rinse under running water and pat dry. Lightly scale and gut the sardines. Cut off all fins except the caudal fin. Carefully peel the shells off the tails of the scampi and remove the intestines. Heat oil really well in a deep pot with the peeled garlic cloves. Remove the garlic again. Now turn all the fish and scampi one by one briefly in flour, pat them down and fry them in the hot oil for a few minutes until crispy. Lift out, pat dry and keep warm. Once all the seafood is fried, arrange on a large plate, lightly salt and serve with lemon wedges.
