For the egg dish, beat the eggs and whisk with the milk, add salt. Cut the leek into fine rings, halve the tomatoes and cut the mozzarella into small pieces.

Sauté the leek in a little oil, then add the egg-milk mixture and let it set. Stir again and again. Just before the egg mixture reaches the desired consistency, add the tomatoes and mozzarella and stir in.

Before serving, tear the basil into small strips and sprinkle over the egg dish.
