Remove the skin from the pumpkin, remove the seeds and dice the flesh. Remove the skin from the vegetable onion and ginger and dice. Slit chili pepper lengthwise, rinse out seeds, and finely dice chili pepper.

Heat butter in a large saucepan. Sauté onion cubes until translucent. Add ginger and chili cubes. Remove the peel from the garlic, squeeze it out and add it.

Briefly sauté the pumpkin cubes and pour on the broth. Cook for 20 to half an hour until the pumpkin is soft. Blend everything with the hand blender or in a hand mixer. Pour whipping cream, bring to a boil and season with salt, pepper and a pinch of nutmeg.

Arrange the portions and sprinkle with parsley.
