Cut meat into finger-thick slices, pound, score fat edge a few times, season with salt, turn in flour to the other side, pull through beaten eggs and turn in bread crumbs to the other side. Shake off any excess breadcrumbs.

Bake immediately floating in hot fat.

Serve with fine vegetables or leaf salad.
