Peel the onions and quarter 2. Rinse carrots, separate from peel and chop into pieces. Heat oil in a roasting pan and brown the drumsticks. Season with salt, thyme and cayenne pepper.

Add carrots and onion quarters and roast in oven for 1 and a quarter hours. After half an hour, pour in half the stock.

Clean red cabbage, cut into quarters and rinse. Cut out the stem and chop the cabbage into strips. Rinse pears, quarter, stone and cut half of the quarters into slices. Cut remaining quarters into wedges.

Cut remaining onion into small cubes, sauté in clarified butter. Add cabbage, braise and extinguish with pear nectar, tap water and vinegar, season. Add cloves, bay leaf and pear slices, simmer for 1 hour. Add pear slices to red cabbage about 100 mmin before end of cooking time.

Keep legs warm. Dissolve stock with remaining broth, degrease, strain, add whipping cream and thicken with sauce thickener, season.

Serve with boiled potatoes, potato dumplings or alternatively Schupfnudeln.
